    During testing, I tried store-bought juice, but it tasted flat. Freshly squeezed oranges and grated zest gave the best vibrant payoff that bottled juices can never replicate. This homemade orange chicken recipe adapts my classic lemon chicken formula to maximize the bold, fresh citrus notes while cutting down on cleanup time.

    • Cornstarch (for coating): Coats chicken for a crisp texture. Sub: Potato starch. Avoid tapioca or arrowroot starch.
    • Neutral Oil: Use avocado, peanut, vegetable, canola, or sunflower oil. Avoid olive oil or any low-smoke point oils.
    • Toasted Sesame Seeds: A garnish that adds a nutty aroma. Look for "roasted" or "toasted" labels.
    • Orange Zest: Adds a strong zesty aroma, which is highly recommended.
    • Green Onions: Adds aroma and color.

    Orange Sauce

    • Freshly squeezed orange juice (no pulp): Use freshly squeezed oranges and strain out any pulp for a smooth sauce. Sub: High-quality store-bought orange juice works but choose one that is not from concentrate and is pulp-free.
    • White Vinegar: Adds acidity. Sub: Rice vinegar or apple cider vinegar.
    • Brown Sugar: Adds sweetness to balance acidity and salinity. I prefer light brown sugar, but dark brown sugar works too.
    • Regular Soy Sauce (for sauce): Adds salt and umami [I prefer Lee Kum Kee or Kikkoman]. Subs: Low-sodium or light soy sauce.
    • Garlic Cloves: Adds aromatic flavor. Sub: Jarred minced garlic.
    • Ginger Powder: Adds flavor and reduces gamey meat taste. Sub: Fresh minced ginger.
    • Cornstarch (for sauce): Thickens the sauce. Subs: Potato starch or tapioca starch.

    Note: Most Asian ingredients are typically found at Asian grocery stores, or you can check online.

    Below are step-by-step instructions on how to make orange chicken:

    1. Mix the Sauce: Whisk the listed sauce ingredients together in a small bowl until the mixture is fully combined and smooth.

    1. Cube Chicken: Dice the chicken thighs into uniform 1.5-inch pieces, leaving the natural moisture intact to help the coating stick.

    1. Simmer and Toss: Bring the sauce to a simmer over medium-high heat until thickened, then add the chicken, toss to coat, and garnish with zest, sesame seeds, and green onions.

    Expert Tips

    • Squeeze fresh juice: Carton juice is heated in factories. This process kills the fresh fruit flavor. Real oranges have natural oils that make the sauce pop.
    • Do not dry the meat with towels. The natural juices act like glue. They hold the cornstarch tight so you can skip the eggs.
    • Fry in small batches: Putting too much chicken in the pan drops the oil heat. The meat will release water and steam instead of getting crunchy.
    • Watch the oil heat: Keep your oil between 325°F and 350°F. If the heat drops too low, the chicken sucks up the oil and turns greasy.
    • Cool on wire racks: Putting hot chicken on flat plates traps hot steam underneath. Wire racks let air move around to keep the bottom crust crisp.

    • Vegetarian: Swap the chicken with diced extra-firm tofu that has been patted dry and fry until crispy and golden.
    • Gluten-free orange chicken: Replace the soy sauce with tamari sauce or coconut aminos.

    Can I make air fryer orange chicken?

    Yes. You can cook this dish in an air fryer. Lightly spray the basket with oil. Arrange the chicken in a single layer. Leave space between each piece. Spray the chicken with oil. Air fry at 400ºF for 10 minutes. Cook until golden and crispy. Do not flip the meat. Simmer the sauce in a pan. Toss the cooked chicken in the thick sauce.

    Why is my chicken not crispy?

    Several factors can prevent crispy chicken: uneven starch coating, oil that isn't hot enough, heat set too low, or an overcrowded pan. Moving the chicken too often while frying can also prevent a proper crust from forming.

      This recipe is a keeper! My husband and I really enjoyed it! Will definitely make this again. I gave leftovers to my 94 year old Mother. She told me it was the best recipe with rice she ever had! She is not a rice lover. I did sauté some broccoli and carrots and put all in a bowl when serving! Delicious!!

        Hi Mahira! No salt is required as the soy sauce is quite salty enough for the dish! If you'd like, you may season the thighs with 1/2 tsp salt but I don't find it necessary for taste.

        Yes, I would recommend spraying some oil on your baking tray and over your chicken. To bake, I would recommend baking at 375 degrees for 10 minutes, then move the top middle oven rack and broil until crispy for 2-3 minutes but monitor it so it doesn't burn. Good luck!

      Another great recipe! I made this last night and it will be added to our rotation of Christie at home recipes in our household.

      We do like a slighter kick, so I will add the pepper flakes as suggestion. I agree the orange juice from oranges is the way to go. It was suggested to add orange zest to give more orange zing!

      I appreciate how approachable all these recipes are and have had a lot of fun making dishes we love at home that taste better!
